Eclairs

So my moms birthday is today. This is the dessert she requested. Her Grandma's Eclair recipe. So that's what I did. I would recommend to pipe the dough longer they puff up and shrink (lengthwise). Don't bake them for too long I baked the circular eclairs for 2 minutes too long and they were rock hard. For the filling if you use cool whip it's really sweet because there is already pudding in the filling so just use heavy whipping cream whip it like you would a meringue add a teaspoon of vanilla and fold together. For the frosting I just used some left over chocolate buttercream and spread it on the top very gently. Serve it with extra filling and chocolate frosting so the guests can get the correct portions they want. I haven't tasted anything yet except for the filling and if I do say so myself it was really really delicious. Enjoy!
