Recipe 2/52: Blueberry Oat Flour Muffins


These blueberry muffins are delicious! They may not look very appetizing, but they are very moist and sweet.
The recipe calls for 1/4 a cup of brown sugar and a 1/4 a cup of honey. That is sweet enough as it is but later on when dividing the recipe into the pan the recipe recommends to put a spoonful of brown sugar on top of each muffin. I passed on that recommendation as I had already tasted the batter and it was very sweet.
The recipe also calls for 1 cup of frozen blueberries when they were baked in the tasted very very juicy. I am not a fan of baked fruit but I do enjoy a good blueberry muffin. The blueberries sunk to the bottom of the muffin some stayed on the top. (I don’t know the science on why some sunk to the bottom and why some floated on the top of the batter) the muffin feels very uneven when you are taking a bite of the muffin. 
It was hard to tell when the muffins were done. The batter was pretty runny but the recipe said it was supposed to be that way. But center bottom was done but the top was not. The texture was also uneven. 
Overall the taste was delicious and the texture was uneven.
I would rate this recipe a 3.5/5 stars.
