Recipe 1/52: Banana Peanut Butter Muffins

My first new recipe of 2021! I needed a protein muffin recipe to pack in my lunch bag for school that can last me from 11:30 to 3:30. So I searched and searched on Pinterest for a protein muffin recipe and I found banana peanut butter muffins. The best part of it is the recipe is naturally gluten free! The recipe called for almond flour, but I try to save my almond flour for macarons. So instead of almond flour I used oat flour. Which caused it to be slightly over baked but I like that way. It gives a crunch not to crunchy a soft crunchy. The texture was great. 
One thing that I would have changed is adding in chocolate chips. Later after I tried it I looked over the notes section of the recipe and there was an option of chocolate chips that I did not see when I was making the recipe. 

Another thing I liked was the recipe didn’t call for the classic white granulated sugar or packed brown sugar instead it called for honey. Which makes it a little “healthier.”

I would have added more cinnamon and honey just so it was a little less bland. The recipe was not that bland in general and I only would have added more honey and cinnamon if I did not add chocolate chips. 
The recipe didn’t taste healthy either it tasted like banana bread. Very delightful.
The recipe called for 2 scoops or a 1/2 cup of protein powder but I was running low on protein powder so I put in about 1 1/2 scoops instead not a huge difference  Since that was not a huge difference the muffins turned out just right.
